If I select "do not allow users to create app passwords" in the 365 admin center MFA service settings, will this prevent users from accessing their desktop apps?

    That approach won’t work. App passwords are intended for a different purpose — specifically for apps that don’t support modern authentication. They aren’t designed to restrict access to desktop applications and don’t have any role in preventing users from signing into them.
