Is it supposed to be like that. Because I want to have different fields for each project (1 project is 1 document type, e.g. visa, contract, invoice, etc.), but now all projects' label data (the training files) and the fields are connected. Resulting in invoice custom extraction model having fields of all the other documents.

Each project in Document Intelligence Studio has its own label data and fields. When you create a new project, you can configure the project details, select the Azure subscription and resource, and the Azure Blob storage container that contains your data. The label data and fields for each project are stored in the Blob storage container associated with that project. Therefore, the label data and fields are not shared across all projects, and each project can have its own label data and fields.
