Custom JSON Attributes as Claims from Identity Provider-Help required

My identity provider (https://domain/.well-known/openid-configuration) supports below claims

claim organisation JSON Structure identity provider configuration provides below userinfo_endpoint information too

what is the best way to retrieve upin value present in organisation object.

Please help with

Technical Profile, ClaimType for organisation, ClaimTransformation to fetch upin from organisation object,
