where can i see (and change) the API - Version i am using?

If you’re using ARM templates for resource deployment, the API version is specified for each resource type in the template.

You can also check form activity log:

Go to Azure Portal > Monitor > Activity Log.

Find the action you performed, and in the details of the log, you should see the API version used for that action.

You can mark it 'Accept Answer' and 'Upvote' if this helped you
