How to fix broken folder settings (accidentally merged Downloads and Users/username folder)

I decided to do some work before I had my morning coffee and in a rush, managed to merge my Downloads folder with the folder C:/Users/dina.thain !

I think I've managed to undo most of the damage and separate the two so that they function as expected by moving folders, renaming, tweaking registry keys etc. However, I'm still seeing some strange behaviour in file explorer. See screenshot below. (Note that I'm using a VM here with O/S: MS Windows Server 2019 Datacenter)

Things that look wrong:

  1. Current behaviour: In This PC, the folder previously showing as "Downloads" with the Downloads icon, is now showing as dina.thain and navigates to the User folder rather than to the Downloads folder.
    Expected behaviour: This PC should contain the "Downloads" folder with the Downloads icon and should navigate to the Downloads folder which exists in C:/Users/dina.thain*/*Downloads.
  2. Current behaviour: In the left nav bar, in quick access, the User folder is listed correctly with the correct icon, but under This PC, I can see the user folder again with the "Downloads" icon again. Similarly to point 1, this also navigates to the user folder.
    Expected behaviour: In the left nav bar, under This PC, the Downloads folder should be listed with the Downloads icon and should navigate to the Downloads folder which exists in C:/Users/dina.thain*/*Downloads
