How can I create a custom attribute in Azure AD?

I'm trying to create an attribute called "Discipline" in azure AD for all of the users that are in azure. I'm also trying to then set that attribute with information about the user, such as which type of therapist they are. I'm a bit new to this, so any help would be appreciated!

How can I actually see these custom attribute values as they don't show up on the User properties.
Plus I want to use them in my SAML setup to pass them through using the attributes/claims, but I can't see these custom attributes there either to select.
Any ideas?tCheers,
