Microsoft outlook will not open on my MacBook ... message says "outlook updating"

It sounds like Outlook might be stuck in an update loop or encountering a glitch. Here are a few steps you can try to resolve the issue:

Force Quit and Restart:

Press Command + Option + Esc to open the Force Quit menu.

Select Outlook and click "Force Quit."

Restart your Mac and try opening Outlook again.

Check for Updates:

Open any other Microsoft Office app (like Word or Excel).

Go to "Help" > "Check for Updates" and install any pending updates.

Reinstall Outlook:

If none of the above works, uninstall and reinstall Outlook. Make sure to back up your data first.
