SharePoint Lists - assistance with Column Formatting using advanced settings

I have created a list for showing staff duties / task for each day, with 12 options for each day.

The staff are in the first column, with the following columns being each day, including weekends.

For the first day I went into the settings, added the duty / tasks using choices and formatted the colours etc. When I then create the next day, I would have to repeat the settings all over again.

I have searched and found that I can edit the default column choices “Settings > Create Column” and format by using JSON. The only thing is, I have copied the JSON into a word document and found there are 27 instances of $Monday in this coding. How or what do I edit so that I can copy the code into the JSON box so that any new column has the choices I want with formatting?
