I created a Team but we are using the original SharePoint and not the Teams created one. If I add a document library that has a folder that is restricted to them on that SharePoint- will is still be restricted to them if I add the document library to a Teams Channel ? Do I need to take any additional steps to change that

Have you added a document library in Teams site?
In my experience, if you have added the document library to Teams channel and set the permission on it, you don't need to take any addtional steps to change it in Teams.
