I was wondering if there is already a project started at microsoft that is making their software products more environment friendly.

I know microsoft is investing in green datacenters in Europe, but that is a bit useless if your wasting resources with your software applications.

Eg. this diagnostig logging that is on by default
Eg. updates that contain alwayse >100MB's or even >GB's.

As I know, there is not. You have to disable the features manually.
Or you can migrate your server to O365 to avoid wasting resources: https://www.quadrotech-it.com/blog/how-to-migrate-exchange-to-office-365-step-by-step-part-1/
