how can I change from an onmicrosoft email address?

When I was setting up my business account, I was required to set up an email address that was XXX@[Company Name].onmicrosoft.com

How can I remove the onmicrosoft part and keep my proper business email address?

You will need to add/verify your domain first: https://learn.microsoft.com/en-us/microsoft-365/admin/setup/add-domain?view=o365-worldwide
Once added, make sure to complete the wizard thingy to configure it for whichever services you want to use within O365, particularly Exchange Online and the corresponding DNS entries. After a domain is verified, you can use the M365 Admin Center to add/changed email addresses as needed.
