To save the important bits of a web page (without ads and other clutter) for reading offline, use the reading view if it's available. When viewing the page, press F9. If you see a de-cluttered page, you're in luck:
- Press Ctrl-P to open the Print dialogue;
- From the Printer dropdown, select Save as PDF;
- Explore the other settings to optimize the page display if you like, then click Save;
- Edit the file name if you want, and choose a place to save the file.
Double-clicking on this file will open it in your PDF reader. If you haven't installed one, it will open in Edge. This is one step up from saving the page as a text file: you can still select text, e.g. to copy it into an email, and essential illustrations will be retained.

Bonus tip: if you don't like the font used to display the text, you can change it to a different one: close the Print dialogue, then click ⋯ (Settings and more) > Settings > Appearance > Customize fonts and select your favourite from the Standard font dropdown. Next time you print a page from reading view, this is the font that will be used (the one in the screenshot is Comic Sans MS!).
