I've just switched to Edge from IE. The IE tool bar which has "file", "Edit", etc does not seem to exist. How do I do an edit function like "Select all"?

I, too, have experienced the changes that the new Microsoft Edge has to offer. Let me assist you.
Just to give you some information, the new Microsoft Edge is based on Chromium and was released on January 15, 2020. It is compatible with all supported versions of Windows.
Compared to the Internet Explorer (IE), the Microsoft Edge do not show the Menu Bar that contains the Edit option. However, the keyboard shortcuts are still functioning just like in IE;
CUT = CTRL + X
COPY = CTRL + C
PASTE = CTRL + V
SELECT ALL = CTRL + A
FIND = CTRL + F (or press the Function Key) F3
