Problem updating Microsoft Edge on Mac

I’ve been having trouble updating Microsoft Edge to the latest version on my Mac. Each time I try to update, on the Microsoft autoupdate window the update for Edge gets stuck on installing (see picture). I’ve restarted my machine, uninstalled and reinstalled both Microsoft Edge and the Microsoft autoupdate and I still get this problem. I’ve never had a problem with updating Microsoft apps via the Microsoft autoupdate before this.

The only workaround I have is reinstalling the newest version of edge but that's incredibly annoying to do each time I want to upgrade.

    So initially I thought that this issue was simply specific for microsoft edge but I noticed that other microsoft apps (word, excel) were also not updating properly. Now when I open the Microsoft AutoUpdate app and there are available updates (either for edge or office apps), I will click update and the update will download but gets stuck on installing. I’ve uninstalled and reinstalled the Microsoft AutoUpdate app version 4.29 and restarted my machine but the problem remains. I can install the updates for office apps manually using the ‘update package’ link from the ‘Most current packages for Office for Mac’ but this is both annoying to do whenever there is an update available and also not possible for edge. 

    To answer your question ‘Are you aware of any changes made to the computer recently?’: I have recently updated the OS to Big Sur but this issue was present on the previous OS (Catalina), and yes I tried all the troubleshooting steps in that link.

    Also I recently contacted Microsoft support and managed to get one of your representatives to view my screen to show them the problem. He recommended I create a new profile on my Mac and see if on the new profile this issue remains. It did unfortunately, and then he was out of ideas.
