is there a way to configure Notepad so that new documents are automatically saved in Unicode without having to change manually the encoding every single time from default ANSI to UTF-8?

    Hi,

By default the encoding option in notepad is set to save as ANSI and there is no way to set UTF-8 as default. This is by design. If you wish to save the file and change the encoding, you will have to manually set the encoding to UTF-8.

Using different language formats in Notepad**http://www.microsoft.com/resources/documentation/windows/xp/all/proddocs/en-us/win\_notepad\_utf\_description.mspx?mfr=true**

    Hope this information helps.

The PC1News.com link mentioned by Vijay Korupolu M has moved here as of 18 Dec 2013 (found by clicking the link & placing "saving-changes-to-notepad-configuration", which was extracted from the original url, in the search box).  Users who come across this thread may find applicable information about changing Notepad's default encoding in the Microsoft Community thread "Default UTF-8 encoding for new Notepad documents" (the consensus appears to be the 11 May 2010 post by Maneuver works in most cases; the 12 May 2010 post by original poster Chimel and the 5 August 2011 post by IRIman - all on p1 of the thread - also may prove useful to those searching for a solution).
