the extensions all changed to pdf from docx
OK. Were the files converted to the .pdf-format or are they still in the original .docx-format?

all my docx documents started opening as pdfs. how do I stop that? I have windows 10 with office 365

The critical question is: Are they MS Word files that you can modify in the usual fashion or are they Acrobat Reader files that you cannot modify? Your reports do not make this clear.
You can find out by launching MS Word, then using the File / Open function.
