How to connect a previosly AD joined computer to a new domain wothout losing data

Our AD was cryptolocked. Restoring from backups failed to get the server to boot, so we're starting fresh.

How can we either move computers to the new domain (same name, new server) or leave the old domain and join the new without having the user's local profiles lose any data?
