How to scan multiple pages with Scan app?

I seem to have been lucky and have only had problems scanning since the 1803 update.  (The printing function still works fine).  Have tried uninstalling/reinstalling my HP 3636 All-in-One and repairing Office (several times), but the 3636 won't scan to the PC except to Downloads.  I can drag the doc scan from there to the folder I want but it's a pain.  Installing and using HP Smart solved this problem: scans can be sent straight to the right folder. 

Windows Fax and Scan does too (hurray!), but is there a way with WFS to scan multiple pages to produce a single PDF?

You can't do multiple pages pdf through Windows Scan app or Windows Fax and Scan. You should use some other app to do this. I suggest that you should NAPS2 which is open source freeware and is one of the top scanning app.

It is better to use the HP scanner software that comes with the HP drivers. Download those from HP Support. The software will have all the features you need.
