Why does my search engine keep changing from Google to Bing in microsoft edge?

Can you please inform us which version of Edge are you using?
If you're using Edge Chromium, you can refer to this link to change your search engine to Google.
If the search engine still changes by itself, it might be there're some softwares or extensions which make the issue.

yes, I have Microsoft edge chromium and the method you showed through the link I already tried before, that changed my search engine to google but that lasted just 1 day, then it came back to bing, later I tried everything but it didn't change my search engine

If this situation, it might be there's malware or virus in your computer which prevents you from changing the search engine. I suggest that you can use some malware and antivirus scanners to see if they can root out the problem.
Besides, I suggest that you can also try to reset Edge browser according to this article and repair Edge browser according to this doc.
