My pc is an HP ENVY laptop, running Win 10 home version 1809 (OS Build 17763.134).
For reasons I can't explain, my Windows Defender icon will go missing from my taskbar.
Other times, if I restart my laptop, the Windows Defender icon doesn't appear.
For what it may be worth, the following, has always worked for me (although I can't explain why) when either of the above occur.
Right click on the Start button.
Point to "Shut down or sign out".
Then left click on "Sign out".
Once the "Sign out" procedure completes, sign back in.
(I left click on the lower left corner of the screen which brings up my sign on dialog.)

Right-click on the taskbar and when you open the window enter the option Taskbar Settings
Scroll to notification area and click Turn system icons On or Off
when you open you select the icons you need
