Yup, you will have to create a new profile. I am able confirm this behavior in 2 of my test tenants.

Hi, I want to change Join to Azure AD as to Hybrid Azure AD joined (existing profile) - however it is grayed-out along with Deployment mode. Is this a bug or? I have already deployed this profile to test VM but now want to test Hybrid Azure AD join having installed Intune connector for AD. Thank you in advance.
