Hello - I can find old articles how to set MeetingRequestDeliveryScope using EWS (or Outlook client)... https://learn.microsoft.com/en-us/previous-versions/office/developer/exchange-server-2010/dd633635(v=exchg.80) But is there a modern way using PowerShell or similar? Thank you

It seems your issue is more related to EWS Managed API, so I would add office-exchange-server-deployment tag and remove Exchange tag for you.
You can still set it via EWS. Or Outlook. There's no PowerShell cmdlet for that.
