Doh I am so stupid. Figured it out.
Just have to close the store completely and restart computer after installing the store language and setting it default.

Microsoft store is in a local language and I can't figure out how to change it to English. Well it's mixed local and English.

Kindly try the following in fixing your language issue in Microsoft Store:
a. Make sure that the country or region and regional format are in your preferred format.
a. Make sure that the language listed is your preferred language.
b. If you have multiple language listed, make sure that you're preferred language is the first one listed. You can arrange it by doing: left click > hold on the language and drag it on top of the other languages.

Under 'preferred languages' you put 'english denmark' as 'default app language' ... you have to delete it and leave only 'united states'
Same thing for 'regionnal format' puts united states.
The Store language can be changed in the online Store as shown here:

You can also adjust Store Language now in the Settings > Time & Language > Language settings.

Guess I have to live with the local language.
Another place where Microsoft is a decade behind the ball. Language locked to region so that Canada has to have 2 regional stores and if you live in the states you aren't allowed to prefer Spanish.
Also. The store being a native windows app it is strange that it doesn't use the default app language. At least for menus and such.
