I have VS 2019 Community setup on my Windows (Version 16.9.4) and Mac (8.9.8 Build 7). Both respond that there are no updates available. When I "Pair to Mac" from the windows PC to the MAC it responds.

The Xamarin.iOS SDK version '14.16.0.5' that is installed on the Mac is not compatible with this version of Visual Studio. Would you like us to install Xamarin.iOS '14.14.2.5' for you? This will overwrite any other existing Xamarin.iOS installation on your Mac.
And then...
There were problems installing Xamarin.iOS from: 'https://aka.ms/xvs/pkg/macios/14.14.2.5'. Please try again and if the problem persists, try installing directly on the Mac and connect again.
I have reverted to doing work on the MAC as I am targeting IOS. I would like to use the Win PC as I am way more comfortable, but it's wonky when I try to build and deploy IOS. Most of the similar responses to version mismatch questions suggest ensuring that both versions are the same and up-to-date, which it seems they are. Looking that the versions referenced, I don't even see a version 14.16.0.5.
Any help would be great.

Hi, EdwardMDavis. What's the version of Xcode on your Mac? To pair to the Max on VS 2019 16.9.4, it requires the Xcode version to be lastest 12.5. Please try to update the Xcode and test again.

it's because the VS for windows did not receive the update to make it compatible with the latest version of Xcode 12.5 yet, only the visual studio for Mac did.
VS 2019 16.9.4 is not compatible with Xcode 12.5, the better questions is how is Microsoft not releasing compatibility update for Windows AND Mac at the same time... and the answer to that is, Microsoft Xamarin team work mainly on Macs.
Yes it is version 12.5 (12E262). I also think it is on the MAC side, but to check I also spun-up another Win 10 PC with VS2019 and get the exact same error. I don't have the luxury of doing that with the MAC because I only have one, just for Dev.

I have downloaded the xamarin.ios-14.14.2.2.pkg from the link 'https://aka.ms/xvs/pkg/macios/14.14.2.5' in the error code. Don't know if I should try to install it on the MAC for the fear of digging a bigger hole.

Very frustrating...
The Win 10 does connect to the MAC after the tantrum about the versions, but when I build and deploy to a IOS device or IOS simulator, it's wonky. Some updates do not appear e.g. resource changes, Launch screens, icons. Looks like a cache problem. Even tried cleaning the builds (bin/obj) directly without luck. I was attributing the problem to the version differences, but I don't know if that would be the case. Like I said, don't want to dig a bigger hole. I wonder should I apply the xamarin.ios-14.14.2.2.pkg to the MAC or would that be asking for trouble.
There seems to be a new update available of Visual Studio for Windows i.e. 16.9.5 which has support for XCode 12.5. Refer link for more details https://learn.microsoft.com/en-us/visualstudio/releases/2019/release-notes#16.9.5
So, I believe the update of VS for Windows to 16.9.5 should take care of your issue.

Found an active thread that seems to be actively following this issue. Doesn't look like reverting to Xcode 12.4 is a good idea also.

Visual Studio 16.95 has been released yesterday, please try the lastest version of VS.

The VS update does not seem to fix this. I ended up rolling back Xcode to 12.4 version and it's working for me so far.
