Good morning,
I have an old W2000 version on a computer that is used only for a special purpose in the machinery field.
I'd like to update it to the last version.
Can you tell me how to update it without connecting to the internet?

If you don’t change the hardware, this Windows 2000 device maybe can upgrade to Windows 2003 or Windows XP at most, the difference is minor and it is hard to find the installation media of these two systems.
If you want to upgrade to the latest Windows version(Windows 10), you have to buy a new PC, there is no way to cross the hardware gap that span 20 years.

That version of Windows is literally 20 years old. There is no direct upgrade path possible with or without the Internet and the hardware is almost certainly not compatible with Windows 10. I strongly suggest you contact the hardware/machinery vendor for guidance.

It's connected to a measure machine

Is it RS232? you can purchase a new pc and get an USB-->RS232 / RS485 if needed. The bigger hurdle for you may be the application OS compatibility itself.

Update to what? The hardware is likely too old to run Windows 10 but I'd start there by asking the hardware manufacturer to confirm. Assuming its a go you can download and create bootable installation media to do a clean installation.

Update to the last version possible. The hardware manufacturer disappeared.

There's no way to know with hardware info. The much simpler method may be to purchase new hardware with windows 10 full or embedded installed.
