Data merger possible?

Ok so I have a server with two VM. We have a physical backup that we have used to restore since there was corruption, but we are also searching through the cloud backups. My question is that if we are able to retrieve more current data (about 2 weeks missing from physical backup) and the users at the work stations continue working and adding more data, are we able to merge the data instead of overwriting it or will the work they’ve been completing in the meantime be lost? And by data I mean their Quickbooks entries and office product entries such as word and excel, pdf sheets, everything basically.
