I see it is still available in the classic view. What if I keep on using subsite? What the effect and how is it different from hub site?

Is the sharepoint online create subsite option not longer available? Just a single level with no hierarchy allowed?

Subsite is still available. There is currently no clear message that the subsite will be cancelled and you are able to use it now. Subsite is also hierarchical. You can create a subsite under the site, and create a subsite under the subsite.
The reason why subsites are not recommended is usually that creating too many subsites may be a bit troublesome in management and may cause some performance issues.
