I'm trying to disable my touch pad, but the only settings in that category is for sensitivity. There should be a lot more there, like automatic disabling of it if I connect a mouse. What is going on here?

Based on the description, it seems that the touchpad is treated as an additional mouse, which prevents the advanced options from showing up.
You can try installing the touchpad driver via Windows update first. To do so, right-click Start->Settings->Update and security->Windows update, install all available updates, including the optional ones, and see whether the issue persists. You can also try updating the touchpad driver from the manufacturer's website.
If the issue persists after updating, what is the brand and model of the laptop? Additionally, please right-click Start->Device manager, expand the "Human Interface Devices" and the "Mice and other pointing devices" section, and provide a screenshot.
