I use 4K TV as a monitor and it does support HDR.
HDR is not the only issue I have. Sound options changes, gaming controls got disconnected etc. Never had such issues on W10.
This browser is no longer supported.
Upgrade to Microsoft Edge to take advantage of the latest features, security updates, and technical support.
Greetings.
Every time after W11 updates installations pretty much all of the settings revert back default. HDR in display settings always switch back to Off, some sound settings also changes, so whatever I change in settings reverts back to the original settings.
Thanks for looking.

Is this when using a std PC monitor
And in display settings scale/layout is set to defaults?
That being the case it would appear HDR is not supported on your system
HDR options are dependent on your hardware https://support.microsoft.com/en-gb/windows/what-is-hdr-in-windows-11-f5fbf5cb-149d-4a0d-8be1-9ed78c68d3b4
