Is this ok for me? I need your opinion about these specs and advice, I have a tight budget, I can't be near to $2,000. To be honest, I need a new PC for Windows 11, Google Meet, Zoom, Youtube and Minecraft.

Save yourself some money and only get one video card as performance boost you may get with SLI isn't really worth the cost. Hereis just one article on the subject. Do some research on the subject before you take the leap. Also keep in mind that not all games support SLI.

You might be happier with a single RTX 3070 ti.

Yes, your processor will be able to run Minecraft well. And I see that your RTX is out of stock.

You need to check if all the hardware is supported by the MOBO, especialpy PSU, GPU, processor, and RAM. But I'd suggest checking if EVERYTHING you chose is compatible. That's my bit of advice.
