My remote desktop connection app has disappeared overnight and is not saying I need to upgrade to Windows 10 Pro. How has this disappeared when I was using the remote connection app 12 hours ago?

You should only need Windows Pro to share that desktop, not connect to it.
Can you try open the Microsoft Store app and search for Remote Desktop and download the app from there?
