I'm sorry I didn't understand the question - do you mean to hide the activity that is visible in the main General / Posts tab?
If so, unfortunately this is not currently possible, however it does have almost 600 votes on UserVoice, which is the way that Microsoft takes in product feedback.

Sorry that I could not help further, but let's see if any other experts have ideas that may help.
I understand about the channels which I did make private, but in creating the team, creating and naming channels, and adding the members are all visible. I would rather that my kindergarten students and their families did not have knowledge of the logistics. Is there any way to delete or hide the steps.

I am an independent advisor and a Microsoft user like you, and I would be happy to help you out with this.
You can create a private channel within a Team to have private conversations and share files.
From the Microsoft documentation:
"Only the users on the team who are owners or members of the private channel can access the channel. Anyone, including guests, can be added as a member of a private channel as long as they are already members of the team.
By default, any team owner or team member can create a private channel."
When you create a new channel, under Privacy, you can select "Private - Accessible only to a specific group of people within the team". I have attached a screenshot showing the option at the bottom of the dialog window.
