If you deleted them from the notebook, you need to go to the team SharePoint site and restore them from the Recycle Bin.

I accidentally deleted a student inside the OneNote desktop version that I created inside of teams. The student shows up in Teams but does not have a Classroom Notebook. How do I get one for the student?
Do I delete the student out of Teams and then add them back into Teams so a notebook would be created? Please advise.

Ok-I did that and they are not showing up with a class notebook. Advise please.
Yes. Delete the student out of Teams and re-add them. You may need to wait a few minutes before the Class Notebook gets updated though.
