I understand Mac users are prompted to enable screen recording in their privacy settings to share their screens in Microsoft Teams. I have done tests on my side on a Mac computer, and I could reproduce the issue.
This is an expected behavior on Mac computers due to the security settings put by Apple, Teams can only follow the device settings. As you can see from the screenshot you shared you can also enable or disable other apps that does screen recording as well.
I followed the prompts to enable recording and it is now working fine, you only need to change it once if you click the lock to prevent further changes after changing your settings. For your reference, please see the screenshots below.
After entering the password click quit and reopen
If you would want this setting removed or changed kindly contact Apple support, for this setting is not Teams side setting.
