If I archive a TEAMS class, will students still be able to access the files, forms, and assignments within that class? I'm mostly interested in the Returned Forms, such as quizzes and/or tests. Thanks!

Per your description provided, we understand you want to know the details about archiving the Microsoft Class Team. So, let me explain you one by one:
a. When you archive the Microsoft Class Team, the archived team will not be displayed in the Microsoft Teams platform, but the SharePoint Online site associated with the Class Team will not be deleted.
b. So the members in the Microsoft Class Team will not be able see the conversations but they can access files shared by accessing the SharePoint site Document Library.
c. Regarding the Assignments, students can see there working by access the Student Work in the Site Contents.
Path: Open the SharePoint Online site associated with Class Team> Site Contents> Student Work
d. Regarding the Microsoft Quiz, I would like to let you know that once the students submitted their responses to attached Quiz in the Assignment, they can’t see the questions again when they open form after submission. Because the attached form or quiz can be responded only once.
So, I am afraid to say that members of Class Team can’t access the Form or Quiz, but the creator of the Form or Quiz can access it via Group Forms in the https://forms.office.com
Note: If you check the read-only option for SharePoint site when archiving the Class Team, then the members can’t be edit the files in the SharePoint Online site.
