First note that there is no such thing as SAC. The last Windows version that had SAC and SAC-T was 1809. All versions after 1809 are essentially SAC with no SAC-T involved.

Deferrals work by allowing you to specify the number of days after an update is released before it is offered to a device.
Deferrals have nothing to do with the supported lifetime of a feature update and this remains unchanged. Spring feature updates are supported for 18 months for all SKUs. Fall updates are supported for 18 months for non-enterprise, non-education SKUs and 30 months for enterprise and education SKUs.
