I find that my SFB online is auto upgrade to TeamsOnly mode. How can I change it back?

You cannot do like that.

If your organization has automatically upgrade your Skype for Business Online users to Microsoft Teams, it cannot be changed back. When IT admin signs in Microsoft Teams admin center and open Teams upgrade under Org-wide settings, it only shows Congratulations! Your organization is already in Teams. There is no option to modify anything for upgrade mode.

Due to Skype for Business retirement on July 31, 2021, the auto upgrading plan makes sure that your organization can work properly even if you forget to upgrade manually. For more information, please refer to this article.
