When I click a hyperlink in Outlook, Edge opens and at the top it says "Internet Explorer mode was used to launch a document in this tab". It won't open the page, It says File not found. It may have been moved, edited or deleted. Err_file_not_found. I have gone into settings/apps/default apps. It is set to Chrome. I changed it to Edge and got a different error message. Any suggestions?

That's how it works for me and a number of others, after the error, click "View in Browser" again and it should work. 'View in Browser" creates a special web page file that ends in .MHT and only IE and Edge in IE mode can display it correctly. When IE leaves us in a few days, Edge will be the only one and it does currently have this glitch. The Edge folks are aware of it and should come up with a remedy.

I am clicking "view this email in browser". It's so annoying! So once I get the error message, if I go back into the email and click "view email in browser" again, it will work? I know I've gotten it to work, but never realized how!

Is this a hyperlink in the body of the email message, or are you clicking the "View this email in a browser" link at the top of the email? If this is the "View in Browser" link, Edge has an issue where it shows this error the first time the "View in Browser" link is clicked, then it works correctly (it finds the file) from then on. If this is happening to a link in the body of the email, something else is afoot.
