The indicator to the left of a recipient's name that shows available, idle, busy, presenting, etc has disappeared. How do I fix this??

If your company is using Teams, then open Teams, at the top right of Teams to the left of your picture click the three dots, click Settings, on the General tab make sure you have checked "Register Teams as the chat app for Office (requires restarting Office applications)".
If you are using some other messaging app make sure its running. In Outlook click File, Options, People, and make sure Display online status next to name is checked and Show users photographs is checked.
My issue started on on Tuesday (today is Thursday). The little indicator next to everyone's name is no longer there. It's always been there. Yes, I'm only referring to people in my company... I understand that concept. Either I accidently did something or something updated behind the scenes, but there must be a way to turn the feature back on.

According to your description, may I carefully confirm with you, when does this issue happen to you? Meanwhile, we kindly suggest you refer https://docs.microsoft.com/en-us/officeupdates/update-history-microsoft365-apps-by-date to upgrade to the latest Outlook desktop client version to check there is any improvement.
