Using New Outlook on Windows for professional communication and productivity

I apologize for not being able to help you, it may be because we are using a different version of New Outlook. I have tried to test the current Windows 11 22H2 Enterprise device and have encountered the same problem you are having, after typing the first letter I am unable to enter anything, and only after typing the Enter key does it go back to normal, in adding the account information as normal.
If the toggle button in the upper right corner doesn't work, you can uninstall that New Outlook to use the Mail software in your computer. Or if you have subscribed/purchased Office, use the Outlook that comes with Office.
Also, to clarify with you, the new Outlook is currently in the process of being updated and developed, and we'd love to hear from you about what's working well, what's not performing as well, and any ideas for improvement, including possible new features and functionality. Your input will help us improve the experience for you and all our users around the world.
In the Outlook app, click on the top left corner and select Help > Feedback.
I will also help you with feedback on this issue, and the more feedback the developers receive, the more likely the issue will be fixed.
