adding hyperlinks to email signature AND editing the name of links

When MS 365 auto updated recently among many things, it wiped out my email signature which included links to disclosure documents on dropbox. After about 8 years, I need to recreate it and while I can copy the links to my signature, I can not seem to rename them. The (many) instructions on the web say "right click" on the link and a menu choice appears to edit hyperlink. I do this and no such menu appears. What am I doing wrong?

What information do you need? I just need to know how to add a link in my signature that links to a dropbox document, and also need to know how I can change the title of the link so it appears as the name of the document and not the entire web address.
