Default hyperlink color on Exchange 365 for Mac applications

The default hyperlink color has changed from blue to green-gray on all Exchange 365 for Mac applications (Outlook, Word, Excel).

Not sure what happened to create this issue, but I want to revert back to the default blue. I can manually highlight the hyperlink text and change the color, but I want to avoid doing this for every email, document, and spreadsheet.

Customer support was not able to resolve the issue (e.g., downloading Microsoft_Outlook_16.86.24063014_Updater.pkg, closing/restarting applications). I want to avoid reinstalling Microsoft Office Exchange 365 for Mac applications if my rules, signatures, and other customized changes are deleted in the process.

Thank you in advance for any assistance.
