Based on your description, I understand the issue you are facing with adding or editing your email signature in Outlook for Windows.

- Will you please share me your Outlook version details? Please follow this article What version of Outlook do I have? - Microsoft Support and follow the steps to check.
- From your screenshot, I noticed that in "Email account" fieled it's blank, would you please let me know how many accounts have you added to yout Outlook and what about the account type? Are you using Microsoft365 business account(******@xxx.onmicrosoft.com/******@yourdomain.com) or personal account (which is ended with outlook.com/hotmail.com/live.com/msn.com) or some other 3rd party pop/imap account? Normally we will have account information in this window:
Would you please go to File-Account Settings-Account Settings... and share me the screenshot of the profiles' status:
In case any private information incuded, you may try to sent via private message:
Here are the steps to open private messages:
To view private messaging options> click your profile picture at the top on the right > select the My Profile option. Click View private message.(I have sent a message to you to open the entry of your private message.)
At the same time, to troubleshoot this problem, please try the following steps:
- Close and reopen Outlook to see if the issue persists.
- Try using another device and check whether the issue persists. Also you may try to login to Outlook web to have a check.
- Try creating a new Outlook profile to see if the problem is profile-specific. Create an Outlook profile - Microsoft Support
- Ensure that your Outlook application is up to date with the latest updates installed. Install Office updates - Microsoft Support
