Is it possible to throttle the Windows Defender full scan? A client has a Windows Server 2019 file server on Azure with just two vCPU. We'd like to do a full scan periodically but as this takes >12 hours, it ends up running during office hours which kills performance of the file server. To the point of being unusable.

Don't really care if the scan takes days to run - that's preferable to the performance hit. Doesn't seem to be a problem with other virus scanners.

You can disable the Windows Defender scheduled Scan task for Windows Defender. Personally I have never found it to be a problem. You will find the task in the Microsoft > Windows Defender in Task Scheduler. Right click it to select disable.
In fact, as a file server, two vCPU seems not to be enough for processing, consider increase its configurations for a better performance.
