Frankly if you are creating forms, I would recommend that you continue to use protected forms using the old check box form fields. They work in Word 2010 just as they did in Word 2003 and you can save the document either as docx or for wider compatibility with users who may not have Word 2007/2010 as doc format.
Forms are much easier to handle if you add Greg Maxey's free add-in to put the familiar toolbar on the ribbon -http://gregmaxey.mvps.org/Classic%20Form%20Controls.htm

When I was creating these forms in MS Word 2003, I went online to search for help making checkboxes interactive - that is, toggled as either checked or unchecked by clicking on the box. Someone out there did provide detailed instructions on how to do this in Word 2003 and it worked for me. But now Word '10 has it as an easy option under the Developer tab, and I'm finding I have to delete my old checkboxes (which no longer have that interactive property since I converted the file) and replace with the new one, one box at a time. I have dozens boxes on my form... Hope this clarifies
