I have created an organisation and Team in MS Teams Free - invites sent to new members who are responding to invites but I cannot see their responses in my requests.

Yes, that's what I did. They accept the invite. But then nothing happens. I don't receive a request/pending request, and they get a message saying they don't have permission to access the organisation contact admin.

How did you invite the member in your Microsoft Teams organization?
In this case, we think it maybe the inviters did not respond the inviting emails.
If you invite someone to join your Teams, they will receive an email tells that someone invite them to join the meeting. If an invitation doesn't go through, try resending it. Even if that person gets multiple invites, they can only join once. Or you can send the link directly to them via social network private message, email, Skype etc.
I have invited them using the invite members option, and have tried sending them the link and sending them an email direct. They receive the request, accept, but then I don't receive a pending request to allow me to add them to the team, and they get told to contact admin as they do not have permission to view the team.

They have to create a username (email address) and password and then they should be able to login via team app or web browser

That's what I thought. But they cant.
I suggest you to look it by yourself and give them right steps. You may send invite to one of your test email address outside the domain and follow the steps and send the screenshots to your users so that they can follow the correct steps. If needed let me know, so that I can invite you to join my Teams channel so that you can frame the steps
