The STYLEREF field is used to do that.
In your case { STYLEREF "Heading 1" }
You can insert it from the Insert>Quick Parts>Field... of by using Ctrl+F9 to insert the field delimiters { } and enter text as shown above inside them. Use Alt+F9 to toggle the display of the field codes.
There are a number of Options and Switches that can be added to the field to control where Word looks of the Style to use. You can see these in the Field dialog accessed by the former method of creating the field and, for the switches, click on Field Codes and then on Options.

In the header of each page in most books is the chapter number and the title of the chapter. How do you insert that into the header so that you did not have to retype it into the header. Do you create a field to store it and then used the field name in the header--if so how do you do that. Or put another way, how can I get a heading 1 description and number to automatically be placed in the header without having to retype it. It is flagged to go to the table of contents--how can I flag it to go to the header?
