I continued to play around with this and I found that my original Excel graphs were not in Arial as I wrote in my question, but in Calibri. If I change the typeface in my Excel graphs from Calibri to Arial, then paste them into Word, they come across fine. Even though my Word document typeface is Calibri, there's not enough difference between Arial and Calibri to be noticeable, so this is going to be my fix (I can't change the Word document to Arial, because Calibri is the organization's standard typeface).
I don't relish the idea of doing this for 32 graphs, and I don't understand why Word seems to think it needs to change my typeface for me, but at least I can move forward.
Thanks for the help. I'm glad you pointed out the Preferences>Edit option--I've never explored that before and found some good options in there.
