Well. since there is no "Word 2010 for Apple" I'm assuming you're actually using Word 2011 for Mac. (If that's not the case, please clarify what version of Mac Office you are using, including the current update level of your installation.)
Before chasing any symptoms, just take a look at the Title Bar of the document where you're having the problem... Is the document name followed by [Compatibility Mode] ? You'll also see that the name of the file has a .doc file name extension.
The deprecated .doc file format doesn't fully support the features of WordArt as provided in the Office 2008/2011 versions. Once you insert the WordArt object you need to either;
- Click the Edit button which appears at the left end of the Format contextual tab of the Ribbon, or
- Right-click the object & select Edit Text from the shortcut menu
You'll be provided with a special dialog window where you can enter or revise the WordArt content. You'll also find that the formatting options offered on the Ribbon will be somewhat different & more restrictive as long as you're working in a .doc file format. You may also find that when you attempt to save changes in that same format you may get a warning that 'data may be lost' or something similar, so...
You may want to consider using Save As to create a copy of the file in the current .docx format. If you do, the full range of WordArt capabilities will return. Other limitations & differences about the program's features (which you may have not even noticed as yet) will also be restored.
