I have the academic license for Office. Today I upgraded to Office 365 ProPlus 2016 that I was given by my college. But I can't find the Black Theme. I only see Colorful, White, and Dark Gray. Why don't I have the black theme and how can I get. I also made sure I have the latest version.

Sorry, I don't know if it is being released to insiders first or not. I was assuming that it was part of the general release. Part of the problem is that MS does NOT release updates to everyone at the same time.
Your question reflects the "beauty" <sarcasm> of what MS has done with Office CTR and Windows 10 "updates"... . MS has totally dumbed down their software for the "average user" (aka ID-10T), and tough luck for anyone who has invested years learning how to customize the software. I had a heck of time beating Win 10 into submission to do something as pathetically simple as get the background color I wanted! I really dislike the limited background color offering, so I made a screen capture picture of a "paint chip" with the right shade of "Win 3.1 blue". But I couldn't get it to use the image ... Turned out I 'somehow' managed to turn on an "Ease of Use" option that blocked using pictures on the background.
Updates have become total black holes. MS will push what ever it feels like, when ever it feels like it and we have to waste our time picking up the pieces trying to get the hardware that we paid for to run buggy MS software. Earlier this month they announced that they would go back to providing some details about updates as they are released.
oops, I stand corrected. It looks like the black color theme is coming back to Office 365. Apparently it is part of the Feb updates:
So just keep updating your Office 365 installation. It should show up eventually. It won't show up in Office 2016 1-computer licenses.
It's just so frustrating since the black color looks the best...
I just installed and updated 2016 Pro Plus yesterday. No sign of the black theme ...
It appears to have "evaporated". I guess the color scheme programmers can't count past 3...
